What's For Dinner?

Whether or not you lead a busy life, being unorganized for dinner can cause you stress and money. Plan ahead and make a weekly menu for healthier, more economical meals.

I personally need some accountability when it comes to meals. Working all day and getting a meal on the table for everyone is a task that I don't particularly enjoy, yet it is important! Make yourself more accountable for meals by adding your daily menu to my posts.

Swim team practice again tonight :) Here's our menu:

Pork Chops

Working all day today. Pulled out freezer meal: grd turkey & rice stuffed pepper with steamed squash, corn, homemade biscuits.

Freezer tip: Bell peppers are on sale like crazy here (.69/lb for red or orange). Last week purchased a bunch, made them into stuffed pepper freezer meals (4 total) to be popped in oven at anytime.Then just make the sides.

Tonight I will bake up 2 salmon filets (I get them frozen individually wrapped bag at walmart) and some fish sticks. My hubby has one fillet and my son and I split one and split the fish sticks. A microwaved mash potato for hubby and "ready rice" for me. We'll all have canned peas and toasted buttered french bread.

tonight was chicken parmesan with homemade rolls...threw in yogurt and fruit for the kids.
