What's for Dinner?

It's an off week for us.  No swim practice, but lots of doctor appointments and a mini vacation beginning Thursday!  I'm trying to get by without much grocery shopping this week.

Here's the menu for tonight:

Homemade Mac & Cheese (made with low fat cheese and margarine)
Fish
Coleslaw
Fruit

I'm leaning toward some chicken (maybe seasoned with my penzey's spices?) and homemade mashed potatoes. I got the potatoes to make potato soup a couple weeks ago and now they're starting to grow. ha.

An easy tasty one for you:

1 box favorite pasta
1 jar favorite pasta sauce
1lb ground meat (I cook mine with peppers, onions and other spices to flavor up the meat
4oz Philadelphia Cream Cheese (only 'cause it's the best)
Parmesan cheese

Fry up meat then drain
Add pasta sauce
Add Cream Cheese
Cook until smooth
Add to pasta
Top with Parm cheese
