It has been quite a week. We're into day two of overnight ice storms. Swim team has been canceled all week. My daughter is swimming in two different programs now through the end of the month. Both have been canceled. I am cooking in the crock pot today to make my life easier. School cancellations are eminent and practice is still on, but may end up being canceled again.
Wednesday's Meal:
We'll probably make this into tacos with veggies and cheese with rice on the side. My husband would probably prefer to have this as a meat and potatoes meal, so that will depend on our evening schedule.
What's on your menu? Inspire me!

Serve this simple and delicious dish to guests and they will think you really did something big! Serves about 6 unless my college age daughter is home and she will eat half of it and still be a size 3!
we'll also have a salad and garlic breadsticks
The Crockpot Ranch Chicken looks like a really easy way to cook up some yummy chicken to have on hand for sandwiches and such. I have maybe 8 bottles of Italian dressing on the shelf and now hubby has decided he likes 1000 Island instead so I think I would experiment with that.
My best friend talked me into trying the kraft cheese with the cream cheese inside, so I'm going to do a pasta bake and use up some frozen sauce with meatballs I made around Christmas.
Shrimp with White Wine Sauce, mixed with Carbanara Sauce and served with penne pasta. We are snowed in, so I feel like making "gourmet" food tonight! :)
