What's for Dinner?? + Giveaway

We're out of town this week and taking a much needed break from our CrAzY busy life. I won't be cooking much at all this week. We have done a small amount of grocery shopping to take care of breakfasts and a few lunches, but other than that we'll be taking advantage of dining out (with coupons, of course!).

Bruegger's Bakery has offered FOUR $5 gift certificates and Money Saving Madness is offering TWO $10 Starbucks Gift Cards to commenters who leave their daily meal plan in the 5 "What's for Dinner" posts this week. Please leave your email along with your meal plan to be considered for the prizes.

We're having crock pot coq au vin with mashed potatoes and squash. one of my fave dinners!

Here's the recipe:

CP Coq au Vin (this is my absolute newest hands-down fave!)
3 lbs chicken thighs (boneless or boned, doesn't matter!)
In a sprayed skillet over Med. heat, cook chicken thighs until browned.
Drain off fat.
Put chicken in CP and top with (in order):
1 envelope beefy onion soup mix
2 cups quartered fresh mushrooms
1 1/2 cups frozen small whole (pearl) onions
3 medium carrots (or about 1 cup baby cut carrots)
1/2 cup dry red cooking wine or sherry cooking wine 

Cook on Low for 5-6 hours (or on high 2 1/2 - 3 hours)
This is AMAZING served over (yes, over) mashed potatoes.

Yesterday we ate at Fuddruckers and I have to say it was the best burger I've eaten in years. I am not a burger person, but it was great!

If you have a Fuddruckers near you I'd recommend it. Their buns are YUM-O!

tonight I'm gonna have chicken. I haven't decided how to cook it yet, but i have a chicken in the freezer. I'm gonna try to make cornfritters and honey butter. Along with salad and mashed potatos.
