Now that is a great question!
I arrived home late last night from a week away in what felt like the next airing of "The Amazing Race". There is absolutely nothing in my refrigerator but a gallon of milk my mom dropped off yesterday and some condiments. We've got plenty in the freezer, so my made-ahead lasagna will have to do, unless I make it to the store today.
After dining out so much all week, I am feeling like we all need a salad and fruit and a lot of exercise!!
What's on your menu? Go ahead and inspire me with some healthy dishes for my menu plan, which I still need to get in order today!

We have a small, delicious ham in the fridge right now, so I think I'm going to make a salad bar with cubed ham, cubed cheese, cottage cheese, romaine, various dressings, and peas.

I had exactly enough time this morning to pull the frozen pasta sauce out of my freezer and set on the counter to thaw before dashing to work. I need to grab some noodles on my way home, but it's going to be a quick and healthy dinner since there's nothing in the sauce that I didn't add!

Busy night with the boys (out the door at 4:30, back at 8pm): Baseball, then swimming. So, we are having a picnic in the car while in route from one to the next: Sub-sandwiches, veggies, fruit, maybe some cookies if I have time & lots of water!
