What's for Dinner??

Save a bundle this week by planning ahead!  If you haven't already created a dinner menu, you can download and print this menu planner!  If you are a busy mom like me, I'd recommend a couple of back ups that are quick and easy.  We keep pizzas on hand!

Mondays are tough!  We have three practices tonight, so we'll be utilizing the Crock Pot to keep everything hot.

Tonight's meal:

Homemade Spaghetti & Meatballs
Salad
Rolls

I'll be cooking the meatballs and sauce in the Crock Pot, and cooking the spaghetti right before dinner.

I bought a pork roast kit at Kroger-comes with roast, veggies and sauce packet-on clearance this morning for 6.99 down from 13.99. Just put it in the crock pot!

Having tater-tot casserole, green beans, green salad with oranges & feta.
This is my hubby's favorite casserole from when he was little. IT is so easy, but we hardly have it because I don't buy a lot of processed/convenience food. He's in for a treat tonight!
TATER TOTS CASSEROLE
1 1/4 lb. ground beef or turkey
4 cups frozen tater tots (approx)
1 can Cream of Mushroom soup
1/2 soup can water or milk

Brown ground beef or turkey drain.
Transfer meat mixture into a shallow 2 quart baking dish. Cover meat with undiluted soup & milk. Stir to combine. Top with a single layer of tater tots. Bake at 375°F for 45 minutes.

We use 20 package of ground turkey & then I don't feel as guilt with the bag of tots!

Stephanie-heavenlyhomemakers.com has a recipe for homemade tater tots that she developed because they don't eat processed food either. They look good, but they may or may not work for your casserole.

momma-lana: I looked on the site you mentioned but couldn't find it in the recipe listing. Does she have it under a different name? My youngest has many food sensitivities, so I have to be cautious of ingredients. Its always nice to have options. Thanks!

Stephanie-Look under Recipes and then Side Dishes and Snacks and then look for Tater Tots. She has kids with food sensitivies too and her recipes could be a help to you.
