What's for Dinner??

I can't believe it is Thursday already.  The weeks have gone by fast.  My two children in school only have one more week +one half day of school left.  We have an exciting summer planned and I am anxious to get started.

My 7-year old desperately begged me for pancakes for dinner last night.  My husband absolutely hates pancakes.  I decided to try to appease them both with this recipe I've been wanting to try!

Thursday's Meal Plan:
Crock Pot Cinnamon French Toast Casserole
Strawberries & Bananas
Yogurt Smoothies

I can't imagine a pancake hater! I have a french toast hater but he (youngest son) will eat it if I dip his bread in beaten egg only which tastes like fried egg bread-ick. I make a homemade pancake mix that many who say they don't like pancakes like. Do you want the recipe?

We are having leftovers. I always forget just how much the recipe from last night makes! Besides, we have had a mouse in the pantry and I don't even want to go in there. I guess that eating a fourth of a bag of chocolate cips made him thirsty so he went to drink from the downstairs toilet and fell in and drowned during the night. Guess who found him! I am never sure that he did not have friends there in the pantry with him so I want to stear clear for at least today. Thankful for hubby who cleaned out the pantry and set traps last night :)

I would love the recipe for pancakes. I love pancakes and so do all three kids.

I'm doing a repeat of Tuesday night - quasadillas with sour cream and salsa. I'll probably do it without chicken tonight for a different flavor. I have to do SOMETHING to keep it interesting since I'm not bothering with side dishes for just me.

Yesterday I went to Aldi and bought tomatoes and lettuce and then to Walmart for a huge loaf of Italian bread, so we are having BLT's with potatoe salad and oranges for dessert. nwalkowski@yahoo.com

Homemade Pancake Mix

12 cups unbleached flour
3 cups powdered milk (Aldi)
3/4 cup baking powder
3/4 cup sugar
2 T. salt

Combine all and store in an airtight container.

To use:
1 1/2 cups mix
2 T oil
1 egg
1 1/4 cups water

Mix with a whisk just to combine, it should still have lumps.

I use 1/2 cup mix per person and it always comes out right on the amount of pancakes, except when our oldest son is here and I use 2 scoops for him because he loves his Mommy's pancakes. I just tweek the amount of other ingredients to match. Extra egg does not hurt it. I make wonderful waffles out of this mix too. When I make it for my Belgium waffle maker I use melted butter instead of oil and it is wonderful.

Hope this does the trick!

My cousin took his family to Disney and they stopped and stayed with us overnight on the way home. They live up there near you. When they got home my aunt (their grandmother) asked them what the best thing was about their trip. Both boys said the pancakes at my house! Really this mix is fantastic! They won out over Mickey Mouse!

My family LOVES!!!!! french toast. This recipe sounds yummy. Could I get that recipe? French toast from a crock pot? PURE GENUIS!!!!!

I am in the process of eliminating foods to try and solve the eczema problem that has been plaguing our 5 month old. So, that means rice and veggies for me and sandwiches and oven fries for hubby and the older kids. Hopefully we will all be back eating the same foods again soon.
