The Most Awesome Blueberry Muffins ~ Ever!
As most of you know, I am not a baker. I married a chef for a reason! However, I do like to bake and of course, we need to eat. I have been using this really awesome recipe for Blueberry Muffins for quite a few months now. They are the best I have ever made, easy and fast to whip up and freeze well. I made 6 dozen last night and wanted to share this recipe, originally from Family Circle.
This is the doubled recipe ~ you'll need extra!
4 cups flour
1-1/2 cup sugar (plus 9-10 tsp for the top)
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup milk
4 eggs
1 cup vegetable oil
2 tsp grated lemon or orange zest
2 cups fresh or frozen blueberries (I always use frozen)
1. Heat oven to 375. Coat a standard size muffin pan with nonstick cooking spray. Muffin papers are not required.
2. In large bowl, whisk together sugar, baking powder, baking soda and salt. Make a well in the center.
3. In a small bowl, whisk together milk, eggs, oil and orange zest. Pour milk mixture into well in flour mixture, Then stir just until combined. Fold in blueberries.
4. Spoon better into prepared muffin pan, 1/3 cup batter in each cup. Each muffin cup should be about 3/4 full.
5. Sprinkle each muffin with 1/2 tsp sugar. Bake muffin at 375 for 23-25 minutes, until crowned and lightly brown. Remove from pan and cool on wire rack. Serve warm or at room temperature.
To be completely honest, I just throw all the ingredients into the bowl except the blueberries. I fold those in last, pour the batter into the greased tins and top with sugar. Works great!

Great, I have loads of blueberries that I froze in the freezer. Do you think that frozen blueberries would work?

I've always used the frozen blueberries when I bake muffins and IMO they taste fine.

Yes frozen blueberries work best for me! That is what I use.
Yummy.. I am really hating my diet right now.. I want some of these now! LOL...

Another blueberry recipe that I have used twice now and is great is the receipe from the April 2010 issue of All you magazine page 111. It is for a blueberry crumb cake. Except I made the topping and only needed to use half of it for one cake.

Thanks for posting this! My youngest son will eat muffins like crazy, but not much else =) I have a good banana recipe, but was looking to branch out. Now I don't have to search for a recipe and wonder if it's good! thanks =)
