What's For Dinner?

I'm a busy mom who needs to be held accountable for meal planning and preparation. After working all day, my daughter needs leave within 30 minutes for swim team practice. The practice is out of town 4-5 days a week. Eating out is just not an option!

Today's dinner menu:
Ground Turkey Mexican Taco Stew
Fruit

We'll be having soup and sandwiches. My son has dodgeball after school until 5:00 and then soccer practice at 5:30. No time to cook! I'll use some of the cheap Progresso soup I picked up a couple of weeks ago, and ham/cheese sandwiches. Tomorrow is payday, so we'll have something better then!

We're having awesome weather for November so are grillin' out! We've got brisket, chicken tenderloins and hot dogs for the kiddos. I'll also be steaming cauliflower. :)

If you do not have a Food Saver, I highly recommend them! It works great for making things ahead. My personal fave is meatballs- when ground beef is on sale I will make 2 large cookie sheets full, freeze them slightly and then pop them into Food Saver bags (abt 20 per). To reheat, just drop the bag of meatballs into the water boiling for pasta (yes - they are boilable bags!!!!), then when I'm ready to cook the pasta I pull out the bag, snip a corner and dump them into the sauce. Easy peasy. There are only 2 of us but I make big portions so we can also have meatball sandwiches the same week!
