I'm changing my dinner plan for today due to an unexpected schedule change. Just when I thought my kids were better from the colds and stomach bugs, we end up with another ear infection. I'll be visiting with more sick people in the doctor's office today -- UG!
My husband and I were the only two to eat lasagna last night and we ended up with an entire pan left over. Life will be easy if we reheat and eat tonight.
I'll be back on the regular plan tomorrow--I HOPE.

Chicken fajita's & spanish rice
(chicken, veggies, & spices cooked in crockpot) so its easy peesy.

Ha-ha! We're having chicken fajitas too with all the trimmings for the kids to make their own: guac, grilled peppers/onions, black beans, cheese, sour cream, salsa. Fruit salad & veggies.
possibly what we call "Country Potatoes".
Ingredients:
oil, vinegar, salt, sugar, pepper, cooked sliced potatoes, and some sort of mini wieners/sausage.
its very good. my aunt started making it and it just tastes great! good pot for St. Patty's too. if any one wants the recipe I would be glad to share:)
Sorry about the sick kids again. Seems no one is well these days.
I'm going to try a new recipe for chicken pot pie that uses crescent roll dough for the crust and we will have a green salad and chocolate cupcakes I made yesterday.
we are having french toast bake I made ahead this morning when my baby and toddler were napping and will pop in the oven tonight very easy!! :)

We're having BBQ ribs, mashed 'taters and steamed cabbage. (Geez, Becca, your County Potatoes sound AWESOME - I'm definately going to have to try that!)
