Easy Meals with Driscoll's Berries

It's berry season and Driscoll's giving 5 Money Saving Madness readers $5 coupons to pick up some delicious Driscoll's berries.  Their finest red ripe strawberries are available at select stores.  GO HERE to enter to win!

Why not take advantage of these great recipes with seasonal berries?  They sound delicious to me!

Strawberry Caprese Pasta Salad
Prep time: 20 minutes
Makes: 4-6 servings

8 ounces Driscoll’s Strawberries
8 ounces shell pasta, cooked, rinsed and cooled
8 ounces fresh mozzarella balls, drained
1/4 cup slivered fresh basil
1/4 cup slivered red onion
1/4 cup prepared balsamic vinaigrette

Rinse, hull and quarter strawberries.
Combine strawberries, pasta, mozzarella, basil and onion in a large bowl. (Can be prepared to this point and refrigerated until ready to serve.)

Drizzle with vinaigrette and mix gently until ingredients are well coated.

Nutrition Per Serving: 322 calories, 12.54g total fat, 5.49g saturated fat, 14.73g protein, 37.32g carbohydrate, 29.86mg cholesterol, 2.75g fiber, 355mg sodium


Strawberry Smoothie Recipe

4 large Driscoll’s strawberries
1 tsp of sugar
1/2 cup of whole milk
1 cup of ice cubes

Blend strawberries with milk on low speed till well smooth, than add ice cubes and blend on high. Add sugar and blend on high speed for about 1 minute. The texture should be slushy and smooth.

Our family loves dining out, but due our limited schedule and our desire to save money, we don't go out that often.  Sometimes I miss the incredibly delicious meals and foods I wish I could have!

Crock Pot Apple Oatmeal

I have been wanting to try Crock Pot oatmeal for some time now and I ran across this recipe.  It is on tap for breakfast Saturday morning.  I'm hoping it will be the perfect "healthy" grab & go breakfast as we head out before sunrise for another Saturday Swim Meet! 

We've got lots of oats on hand from the Giant Eagle sales (FREE!).  We're going to double this for five of us!

Crock Pot Apple Oatmeal
from Flavors of Fall (Gooseberry Patch)

1/4 cup brown sugar, packed
1 T. butter melted
1/4 t. salt
1/2 t. cinnamon
1 cup quick cooking oats, uncooked
1 cup apple cored, peeled & minced
1/2 raisins *optional
1/2 chopped nuts * optional
2 cups milk

Grease slow cooker, then place all ingredients inside.  Mix well.  Set on low overnight about 8-9 hours.  Serves 4.

Your Favorite Christmas Cookies ( & Mine Too)

It wouldn't be Christmas without cookies!  There are a bunch of cookie lovers in my family and we plan to bake up a few dozen cookies sometime between now and Christmas.   One of our top favorites is Peanut Blossoms made with Brach's Stars.  This is a tradition my mom started years ago and she always used chocolate Brach's stars.  It wouldn't be Christmas at my house without those!  Another favorite is Russian Tea Cakes - my mouth is watering just thinking of these cookies!

Chunky Pecan Pie Bars Recipe

To the busy, overscheduled person who doesn't have her Christmas shopping done (that's me, by the way), baking Christmas cookies seems quite daunting.  Making bars instead of cookies will cut my time in half and get the job done.

An aunt made some Pecan Pie Bars for Thanksgiving that were incredibly good.  Here's a similar recipe from the BrownEyedBaker:

Delicious No Bake Turtle Pumpkin Pie

While shopping this weekend, my daughter thought it would be fun to pick up the ingredients for a No-Bake Turtle Pumpkin Pie recipe we found on a Jello display.  I have never made a no-bake pumpkin pie, but agreed we could give it a try.

This is a great recipe for kids in the kitchen, and let me tell you, it's super delicious and really quick and easy.

1/4 cup plus 2 Tbsp. caramel ice cream topping, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
1/2 cup plus 2 Tbsp. chopped PLANTERS Pecans, divided
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

POUR 1/4 cup caramel topping into crust; sprinkle with 1/2 cup nuts.
BEAT next 5 ingredients in large bowl with whisk until well blended. Stir in 1-1/2 cups COOL WHIP; spoon into crust.
REFRIGERATE 1 hour. Top with remaining COOL WHIP, caramel topping and nuts just before serving.
