What's for Dinner??

We're saving money on meals this week by planning ahead.  I've used my Family Friendly Meal Planner to schedule the week's meals.  The plan is flexible, and I'm not left wondering at 4 pm what to have for dinner.

We're using up leftovers from Easter dinner to make one of our favorite meals today!

Monday's Meal:
Creamy Ham & Potato Soup (incredibly easy and gets 5 stars)
Homemade Rolls
Veggies & Dip
Strawberry Pretzel Salad

The college kids and their friends came and ate and would not take any leftovers so hubby and I have alot of Easter dinner to eat.
Leftover---
spiral ham smoked in the smoker (if you have a smoker you have to try this-WOW it is good)
scalloped potatoes
candied sweet potatoes
fresh green beans
corn in butter sauce
homemade rolls
deviled eggs
fruit salad
chocolate cake

That soup sounds good! I may do that later in the week when our temps are cooler. We are already in the mid 80s for the next few days.

WOW, I want to go to Lana's house for dinner!
Just got back into town this afternoon. Hadn't a chance to plan out menu for this week or grocery shop yet. Thankfully, the troop wants something easy:
pre-packaged mac & cheese
some sort of frozen veggie
fruit smoothies
anything else I can find to feed them!

Do you have a recipe for black beans and rice? I had some once that was really tasty and had seasonings on it. I have tried to make it and it never tastes the way I want it to.

The obvious ingredients were
Black Beans
Rice
&
Cheddar Cheese

We're having leftovers. We had soup night for Easter. 4 different types of soups. I'll also make some biscuits using the bread maker for the dough. Cut my time in the kitchen.
Oh and going to make cajon deviled eggs since eggs are already hardboiled :)

Italian Black Beans and Rice

2 T olive oil
1/2 c chopped onion
2 garlic cloves, minced
15 oz can black beans, undrained
1/2 c cubed ham
3/4 t. dried Italian seasoning
5 drops hot pepper sauce
2 cups hot cooked rice

Heat oil ina skillet and saute onion until tender, Add garlic and saute 30 seconds. Add remaining ingredients except rice. Simmer uncovered for 6-8 minutes. Serve over rice. Says it serves 4 but at my house it serves 3.

You could garnish with cheese, salsa or whatever you want but it is so good it really needs nothing else. Aldi has canned black beans for a great price.
